Saag Recipes
Saag is a traditional Pakistani dish made from leafy green vegetables, often spinach or mustard greens, and it's usually simmered with various spices and sometimes cream or yogurt. Here are two popular saag recipes:
1. Sarson da Saag (Mustard Greens Saag):
Ingredients
- 500g mustard greens
- 2-3 green chilies, chopped
- 1-inch piece of ginger, grated
- 4 cloves garlic,minced
- 1 onion finely chopped
- 1/2 cup cornmeal (makki ka atta)
- 1/4 cup ghee or clarified butter
- 1 tsp cumin seeds
- 1 tsp red chili powder
- 1 tsp turmeric powder
- Salt to taste
Instraction:
1. Wash the mustard greens and spinach thoroughly. Chop them finely.
2. Heat water in a large pot and blanch the greens for 2-3 minutes. Drain and let them cool.
3. Once cooled, blend the greens into a coarse paste using a food processor or blender.
4. Heat ghee in a pan and add cumin seeds. When they sizzle, add chopped onions, green chilies, ginger, and garlic. Sauté until the onions turn golden brown.
5. Add chopped tomatoes, red chili powder, turmeric powder, and salt. Cook until the tomatoes become soft and the oil separates.
6. Add the green paste and cook for another 10-15 minutes, stirring occasionally.
7. Gradually add the roasted cornmeal to the saag mixture, stirring continuously to avoid lumps. Cook for another 10-15 minutes until the saag thickens.
8. Serve hot with makki ki roti (cornflat bread) and a dollop of ghee.
