Chicken Handi 

Chicken Handi is a popular Pakistani dish known for its rich and creamy tomato-based gravy. It's often made with boneless chicken pieces cooked in a thick, spiced tomato gravy along with cream or yogurt. Here's a basic recipe for Chicken 

Ingredients:


For the Marination:
  • 500 grams boneless chicken,cut into bite-sized pieces
  • 1/2 cup yogurt
  • teaspon ginger- gerlic paste
  • 1/2 teaspoon red chili powder
  • 1/2 teaspon turmeric powder
  • Salt to tast.For the gravy.                                                                          
  • 2 tablespoon oil-ghee
  • 1 onion finley chopped
  • 1 tablespoon ginger-gerlic paste
  • 2 tomatoes pureed
  • 1/2 cup csshew nuts,soaked in warm water and blended into a paste (for creaminess) 
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspon coriander powder 
  • 1/2 teaspoon red chili powder 
  • 1/2 teaspoon gram masala
  • 1/2 teaspoon kasuri methi
  • Salt to taste
Fresh to coriander leaves for garnis

  • Instruction:

1. Marinate the Chicken
  • In a bowl, mix the yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt
  • Add the chicken pieces to the marinade and coat them well. Let it marinate for at least 30 minutes (longer if possible
  • Heat oil in a large handi or heavy-bottomed pan.
  • Add the marinated chicken pieces and cook them until they turn white and are partially cooked. Remove them from the pan and set aside.
  • Add cumin seeds and let them splutter.A
  • Add ginger-garlic paste and cook for a few more minutes until the raw aroma disappears.
  •  the finely chopped onions and sauté until they become translucent.
  • Add the tomato paste, coriander powder, cumin powder, paprika, garam masala, and salt. Cook this mixture for a few more minutes until it thickens and the oil separates again.
  • Add the partially cooked chicken pieces back to the pan and stir well to coat them with the gravy.
  • Reduce the heat, cover the pan, and simmer for about 10-15 minutes or until the chicken is fully cooked and tender.
  • Once the chicken is cooked, add heavy cream or yogurt, and gently stir to combine.
  • Simmer for another 5 minutes, stirring occasionally, until the gravy thickens.
  • Taste and adjust salt and spice levels if needed.
