Aloo ki Tikki:
Ingredients:
4 large potatoes, boiled, peeled, and mashed
1/2 cup finely chopped onions
2 green chilies, finely chopped (adjust to your spice preference)
1/4 cup chopped fresh coriander leaves (cilantro)
1/2 teaspoon cumin seeds
1/2 teaspoon red chili powder (adjust to taste)
1/2 teaspoon garam masala
Salt to taste
Oil for shallow frying
Instruction:
Boil the potatoes until they are soft and easily mashable. Once boiled, peel and mash them in a large mixing bowl.
Heat a little oil in a pan and add cumin seeds. Allow them to splutter.
Add the chopped onions and green chilies to the pan. Sauté until the onions become translucent.
Add the red chili powder, garam masala, and salt to the onion mixture. Sauté for a minute or two to roast the spices.
Pour this onion-spice mixture into the mashed potatoes. Add the chopped coriander leaves as well.
Mix everything well to combine the spices and ingredients thoroughly. Taste and adjust salt or spices if needed.
Divide the potato mixture into equal portions and shape them into flat, round patties or tikkis.
Heat some oil in a shallow frying pan over medium heat.
Carefully place the potato tikkis into the hot oil and fry them until they turn golden brown and crispy on both sides. You can shallow fry or deep fry, depending on your preference.
Once cooked, remove the tikkis from the pan and place them on a plate lined with paper towels to remove excess oil.
Serve the aloo ki tikki hot with chutney, yogurt, or ketchup.
